OH MY MEXICAN COD

This healthy dinner is not only delicious + affordable, but it only takes 20 minutes from start to mouth!  You don't even need to measure the spices, just sprinkle the cod fillets with Cumin and Chile Powder until all you see is that gorgeous burnt-red color.  The Purple Cabbage Slaw is a family flavor favorite.   You and your loved ones are going to be licking the bowl after the slaw is all gone - that Sriracha Lime-Mayo Dressing is da bomb diggity!  This Mexican Cod can be served by itself or placed on a tortilla with slaw to be eaten taco-style!  There is no wrong way to eat this fun, fresh meal.  Enjoy!

MEXICAN COD WITH A
PURPLE CABBAGE SLAW

     serves 4

Ingredients:

Mexican Cod
  • 4 fillets of wild caught cod
  • 1 tbsp ghee or organic butter, melted
  • Ground Cumin
  • Chile powder
  • sea salt and ground pepper, to taste
  • lime slices, for serving

Purple Cabbage Slaw
  • 1/2 purple cabbage, cut into strips

Sriracha Mayo-Lime Dressing
  • 1/2 cup organic mayo or homemade paleo mayo 
  • 2 tbsp lime juice
  • 1 tbsp Sriracha sauce or Garlic Chili Pepper Sauce (A Taste of Thai)
  • dash of cayenne
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp ground pepper

1. Preheat oven to 400 degrees.  Lay parchment or aluminium foil on a large baking tray.  Pat fillets dry and lay on top of baking pan.

2. Brush cod fillets with melted ghee. Then, sprinkle to cover the entire fillets with Chile powder and Cumin seasoning. Add some sea salt and pepper, to taste. 

3. Bake cod for 15-20 minutes, or until fish is opaque.  While the fish is baking, prepare the slaw. 

4.  Place purple cabbage strips into a large mixing bowl.  To make the Sriracha Lime-Mayo Dressing, whisk all ingredients together until smooth.  Pour dressing on top of slaw and mix gently until cabbage is evenly coated. 

5.  Serve your delicious Mexican Cod with a large serving of this gorgeous + delicious purple cabbage slaw, and garnish with lime slices!

CHORIZO-EGG TACO salad

So let's continue to eat a good source of creature protein, shall we?

CHORIZO-EGG TACO SALAD
serves 5-6

Ingredients:
  • 1 lb chorizo 
  • 1 tbsp organic butter or ghee
  • 1/4 yellow onion, chopped
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano or Italian seasoning
  • 1/2 tsp garlic powder
  • 5 eggs, whisked
  • 1/2 lime, juiced
  • lots of fresh cilantro, chopped
  • sea salt and pepper, to taste

1.  Heat 1 tbsp of butter in a large skillet on medium heat.  Add chopped onions and cook for 10 minutes, or until onions start to brown slightly.

2.  Add in chorizo and break into tiny pieces using a spatula while it is cooking.

3.  Once chorizo is cooked, about 10 -15 minutes, add in seasonings and stir altogether.  Next, add in whisked eggs and using a rubber spatula gently mix and cook. 

4.  Once eggs are cooked, turn the heat down to low, and stir in lime juice and lots of fresh cilantro.

5.  Serve this flavorful complete protein :) on top of your favorite greens.  Add your with your favorite taco toppings, like plain Greek yogurt, salsa and more fresh cilantro!

5 REASONS WHY WE SHOULD BE COOKING MORE

Knowing the truth about food makes it easy, exciting, and fun to make choices that improve and sustain our health.

1.  SAVES MONEY
Eating out every night is expensive!  It may seem like a fast food hamburger is way cheaper than buying a pound of ground meat, but that $6 you spent on a pound of meat will make more than 6 servings of good protein.  A little (of whole food), goes a long way (in number of servings). 

2.  HEALTHIER MIND + BODY
Good food = Good mood. What you put into your body affects your WHOLE body-your brain, bones, hormones, organs, energy level, and the list goes on and on! If you are knowingly buying whole foods and preparing them yourself- you have the power to make yourself feel good or not so good.  Buy and cook foods that will make your brain and body happier, and start saying "good-bye" to illness! 

4.  FOOD EDUCATION
If you are buying and cooking the food you eat, you are learning about nutrition whether you realize it or not.  If you search for a healthy recipe for pizza or orange chicken, you are learning about the ingredients and the health benefits they will provide you.  The more you know about food, the healthier choices you will make for yourself. 

5.  BRINGS FAMILY TOGETHER
Cooking more means that other family members can share the experience with you.  The more you cook, the more likely you are going to gather around a table together with loved ones to chat, laugh, and just enjoy the moment. Take time to experience the gratitude you have for both family and food.  

6.  BUILDS HEALTHY HABITS
The more you cook, the more likely you will prepare all of your meals- breakfasts, weekly lunches and snacks.  Once you feel and see the positive affects of eating good, whole foods, you will want to continue that feeling as long as possible. If you are a parent, you are the most important role model for your child. Teach and show them everyday how simple it is to live a healthy and happy life. Cooking and preparing good food are life-saving habits that every child should learn.   

Let's sum it all up in a few sentences. Cooking more allows you to save money, learn about the food and the nutrients it provides your body, build positive relationships with loved ones, and provides you the health and energy needed to live the lifestyle that makes you happy.  Am I saying eating out is bad? No, of course not.  Just try to do less of it, and make sure to choose whole foods whenever possible -not the packaged, processed and wrapped stuff they call "food".

ITALIAN LAMB MEATBALLS

Lamb oh Lamb, are these meatballs tasty!  

I couldn't help myself to add a lamb pun into the mix :). But in all seriousness, these tasty meatballs will knock your wool socks off! The combination of spices used to make the meatballs almost make the lamb meat unrecognizable.  You would swear you were eating pork or beef!  Lamb meat is a very affordable option for healthy protein, instead of using the same ole beef and chicken.  So, how about you spice-up your dinner plans this week and try this recipe out for size! 

ITALIAN LAMB MEATBALLS
in a ZESTY TOMATO SAUCE

Ingredients:
Sauce
  • 1-15 oz. can Organic tomato sauce
  • 2 cloves garlic, minced
  • 3 tbsp extra virgin olive oil
  • 1 tbsp Italian seasoning
  • salt + pepper, to taste
Meatballs
  • 1 lb ground grass-fed lamb
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp Italian seasoning
  • 1 tsp salt
  • fresh ground pepper, to taste
  • fresh basil leaves, for garnish

1.  In a large pot, add all ingredients together and stir to make the zesty tomato sauce. Place pot on medium heat while you begin to make your tasty meatballs.  

2.  In a large bowl, mix together the meat and spices with your hands.  Form and roll into 7-8 medium-size meatballs. 

3.  Gently add meatballs into your tomato sauce and cover gently with sauce, so they are submerged into the delicious pool of tomato-ness. 

4. Cover pot with a lid, and let meatballs simmer for 45 minutes. The longer they cook the better! 

5.  Serve these flavorful meatballs on top of your favorite pasta, baked potato, or my favorite way is over zucchini noodles!

Simple Taco Bowls

The only bad taco is the one you didn't eat. 

My family and I are HUGE Taco Tuesday fans.  We eat tacos lots of different ways, one of those ways being in a bowl.  It's fun to grab an over-sized bowl, put in your taco meat and toppings, then mix it altogether for a healthy and delicious meal.  Our ground meat is flavored with 8 different spices to really bring out the fiesta flavor!  Feel free to mix these 8 taco seasonings together in a small jar ahead of time and store in your pantry for easy future cooking.

Let's get your favorite taco toppings ready to create a tasty taco bowl!

SIMPLE TACO BOWLS
serves 5-6

Ingredients:
  • 1 lb of grass-fed ground beef (or your choice) 
  • 1 lb of ground turkey or chicken (or your choice)
  • 2 cups of rice or quinoa, optional
  • 1 lime, sliced
  • *8 taco spices (see below)

*8 Taco Spices 
  • 4 tsp chili powder
  • 3 tsp paprika
  • 2 tsp onion powder
  • 1 tsp sea salt
  • 1 tsp garlic powder
  • 1 tsp ground cumin
  • 1 tsp oregano
  • dash of cayenne pepper

Optional taco toppings:
  • salsa or tomatoes
  • chopped greens (spinach, kale, arugula, spring mix)
  • dollop of Greek yogurt or sour cream 
  • shredded cheese
  • avocado slices or guacamole 
  • fresh cilantro

1.  If having rice or quinoa cook according to package directions.

2.  While that is cooking, heat a large skillet on medium heat.  Begin cooking your 2 lbs of ground meat, breaking it into smaller chunks as it's cooking. 


3.  Once meat has finished cooking, add in all 8 Taco Spices and mix together.

4.  Serve this delicious taco meat and rice in a large bowl, add your favorite taco toppings, and serve with some fresh lime juice!
