Simple Slow Cooked Meatloaf

Everything about this meatloaf recipe reminds me of my grandmother's house.  If there was ever a candle named "Grandma's Home Cooking," it would be the exact smell of this delicious meatloaf cooking, for sure. 

Let's not waste anytime!  Grab some grass-fed beef at your local grocery store, and get ready to taste the moistest and most tastiest meatloaf of your life!  Seriously though, this recipe is a keeper. 

We served ours with a homemade lentil noodle mac-n-cheese with some chopped steamed kale and broccoli thrown in for some veggie pleasure!

SIMPLE SLOW COOKED MEATLOAF

Ingredients:
  • 2 pounds grass-fed beef
  • 2 eggs, beaten
  • 1 cup yellow onions, chopped
  • 3/4 c. crushed saltine crackers (whole grain) or cracker of choice
  • 3/4 c. organic ketchup
  • 1 tsp. salt
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • black pepper, to taste

TOPPING:
  • 1/2 c. organic ketchup
  • 1 tsp. Dijon mustard

1.  In a large bowl, combine beef, eggs, cracker crumbs, ketchup, onion, and all seasonings.  Mix gently, do not compact.  Shape into an oval or round shape.  Place meatloaf into a slow cooker.

2.  Then, gently spread the topping all over the top of the meatloaf.  Set slow cooker on low heat and cook for 6 hours or until meat is tender. 


Enjoy the journey of making this meatloaf, from beginning to end.
