Almond Mini Donuts

Everything is cuter when it's mini. 

This recipe was inspired by an amazing (though definitely not healthy) almond croissant I had at my favorite bakery shop the other day, yummy. I wanted to create a healthy treat with that same tasty almond flavor that I could easily replicate at home. These mini donuts are not only healthy, but super moist and topped with a fun nutty crunch!  This recipe is very similar to my Maple Glazed Donuts but with just one difference. Instead of using vanilla extract, you use almond extract. Super simple, right?!  I also added directions on how you can make these mini donuts by just using a food processor.  That makes the clean up even better!  

These donuts can also be made into a regular size with a larger donut pan. Keep it mind that it only makes ten regular sized donuts versus 26 mini donuts :)

ALMOND MINI DONUTS
makes 26 donuts

Ingredients:

Wet
  • 1 egg
  • 1 cup almond milk (use any milk)
  • 1 tsp. almond extract
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
Dry
  • 2 cups oat flour (blend oats in a food processor)
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1/4 tsp. salt

Glaze
  • 2 tbsp. coconut oil (+ some for greasing doughnut pan)
  • 2 tbsp. maple syrup
  • 2 tbsp. almond milk (use any milk)
  • 1/2 tsp. almond extract 
  • slivered almonds, crushed 

1.  Preheat oven to 350 degrees and grease a mini donut pan with coconut oil. 

2.  In a large bowl mix wet ingredients together.  Then add dry ingredients. Whisk everything together until it makes a nice donut batter OR Using a food processor blend the oats first.  Then add the rest of the donut ingredients.  Blend until it makes a smooth batter. 

3.  Pour donut batter into a measuring cup with a pourable lip or top. This helps you accurately pour the batter into each doughnut cavity.  Fill each doughnut cavity with the batter.  Bake for 15 minutes, or until your toothpick comes out clean. (Toothpick test: Stick a toothpick in the doughnut until it comes out clean) 

4.  While donuts are baking, mix all of the glaze ingredients together (except the slivered almonds) in a small pot over low medium heat until it starts to simmer. Remove from heat and put aside until doughnuts are baked and cooled. Dip each doughnut into the glaze.  If you have excess glaze you can always pour more glaze all over the donuts :)

​Sprinkle crushed slivered almonds on top of your mini donuts for a fantastic sweet treat!

10 Minute Chia Pudding!

Oh CHIA baby! 

Chia pudding is such a simple nutritious meal that many people love. We all know that there are tons and tons of recipes out there for overnight chia pudding (six to eight hours of waiting), but what if you decide you want it at the last minute. Good news friends :) it's not too late to make that delicious creamy bowl you've been craving! Whip up this healthy sweet meal in a jiff and set it in the fridge for only TEN minutes! Yup- that's it.  It's a balanced breakfast, lunch or dinner with good protein, healthy fats, and sweet carbs that will energize you for sure!

10 MINUTE CHIA PUDDING
serves 1

Ingredients:
  • 1/4 c. oats
  • 1/4. c. vanilla protein powder (or any flavor) 
  • 2 tbsp. chia seeds
  • sprinkle of cinnamon, nutmeg + ginger
  • 1/2 c. unsweetened almond milk (or any milk) 

1. In a small bowl mix oats, protein powder, chia seeds and spices together.  

2.  Add in milk last, and stir to combine everything.  

3.  Let chia pudding set in the fridge for 10 minutes.  Serve with your favorite toppings like fresh fruit, nuts or even nut butter.  Yummy!

Chocolate Glazed Donuts

There's no time for chit chat!  Let's make magic happen in your kitchen today.  Grab that ten dollar donut (doughnut) pan you've invested your happiness in, and let's bake these simple chocolately gems I like to call Chocolate Glazed Donuts. A REAL treat made with REAL ingredients. Guilt-free and gluten-free for all to love and enjoy!

CHOCOLATE GLAZED DONUTS
makes 10 donuts

Ingredients:​

​Wet
  • 4 eggs
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted (+ 1 tbsp of coconut oil for greasing pan)
  • 1 tsp vanilla extract
Dry
  • 1 1/2 cups gluten-free flour
  • 1/4 cup cacao powder or unsweetened cocoa powder
  • 1 tsp. baking soda
  • 1 tsp. instant espresso powder
  • 1/2 tsp. salt

Glaze
  • 1/4 cup coconut oil
  • 2 tbsp. cacao powder
  • 2 tbsp. maple syrup

1.  Preheat oven to 350 degrees and grease a doughnut pan with coconut oil. 

2.  In a large bowl mix wet ingredients together.  Then add dry ingredients. Whisk everything together until it makes a nice doughnut batter. 

3.  Pour batter into a measuring cup with a pourable lip or top. This helps you accurately pour the batter into each doughnut cavity.  Fill each doughnut cavity with the batter.  Bake for 12-15 minutes, or until your toothpick comes out clean. (Toothpick test: Stick a toothpick in the doughnut until it comes out clean) 

4.  While doughnuts are baking, let's make the glaze!  Put the coconut oil in a small pot over low heat.  Once the coconut oil has melted, whisk in the remaining glaze ingredients.  Remove from heat and put aside until doughnuts are baked and cooled. Spread, pour or dip each doughnut into the glaze.  If you have excess glaze you can always pour more glaze all over the doughnuts :)

Simple Oat Pancakes

Let's make pancakes and pretend it's the weekend.

You guys are going to love these yummy Simple Oat Pancakes! They are gluten-free and guilt-free, yippee!  

The oats make these pancakes very special, because they stay crispy on the outside, but soft and fluffy on the inside.  

​Did I mention that these pancakes are also very F I L L I N G and will most definitely leave you feeling satisfied :)  

​Let's grab a few ingredients and make some pancakes, so your weekdays start to feel like the weekend!

simple oat pancakes
makes 9 small pancakes

INGREDIENTS: 

​Wet
  • 3 eggs
  • 1 tsp. vanilla extract
  • 1 tbsp. maple syrup
  • 1 tbsp. almond milk or any milk 

Dry
  • 1 1/2 c. oat flour (blend oats in food processor)
  • 1 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • pinch of salt

1.  Using a Nutribullet or food processor, blend oats until they are a flour-like consistency.  

2.  In a large mixing bowl, whisk all of the wet ingredients together.  Next, add all of the dry ingredients and whisk to make a thick pancake batter.

3.  Heat some butter or ghee in a large skillet on medium heat.

4.  Pour about 1/4 c. of pancake batter into the skillet.  Let pancake cook for about 2 minutes, or until sides start to look cooked and flip.  

​Serve your pancakes with your favorite toppings (mine is butter + maple syrup) and pair them with other yummy breakfast staples.

Maple Glazed Doughnuts

Doughnut or donut?  You don't spell it, you eat it! 

Let's put spelling aside, and get ready for the healthiest and tastiest doughnut you have ever had!  I finally splurged on a $10 doughnut pan at Target and made my baking dreams come true. I have been motivated for quite some time to create a simple, healthy and totally delish sweet treat, preferably in the shape of a doughnut :)  

You could eat these doughnuts by themselves or glaze them up with an amazing maple glaze. Once you dunk your doughnut in this maple glaze, you will be licking the freakin' bowl and everything else the glaze touches, haha.  But please, doughnut take my word for it.  Grab your donut or doughnut pan and give this simple recipe a whirl!  

​Craving chocolate??  There is also a chocolate version of this doughnut as well (see recipe).

MAPLE GLAZED DOUGHNUTS
makes 10 doughnuts

Ingredients:

Wet
  • 1 egg

For Chocolate Maple Glazed Donuts also add:
