CHICKEN CHORIZO TACOS

All I need is you & me (and tacos).

This taco meat will blow your mind, well not literally, but your mouth will be ridiculously pumped!  This recipe is bursting with flavor from the ground chorizo, as well as from a few spices to really seal the deal. These tacos are super simple to make, you could possibly make these every Taco Tuesday! Dream come true :) 

If you don't get excited when you eat tacos, I think this recipe will change your mind.  Enjoy eating this tasty taco meat on a bed of your faovirte salad greens, or inside a hard or soft tortilla.  But, do make sure your taco toppings of salsa, and guacamole are not far from the table! 

CHICKEN CHORIZO TACOS

Ingredients:
  • 1 tbsp grass-fed butter, or ghee
  • 1 lb ground chicken
  • 1 lb ground chorizo
  • 1/2 onion, chopped
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1/2 c. organic tomato sauce 
  • salt and pepper, to taste
  • 1/2 lime, juiced
  • cilantro, chopped (optional)

1.  In a large pan on medium heat, melt butter or ghee.  Next, saute your onions until fragrant or slightly translucent.

2.  Add in your chicken and chorizo, using a spatula to break apart your meat into smaller pieces.  

3.  Once meat is almost finished cooking, add in spices, salt and pepper, and tomato sauce in the pan. Bring to a boil, then reduce to a simmer for about 5 more minutes. 

4.  Stir in lime juice and sprinkle fresh cilantro on right before serving this tasty meat in a tortilla or on top of your favorite salad greens!

STONE GROUND MUSTARD TURKEY BURGERS

let's jive and make some turkey burgers ya'll! 

These turkey burgers are absolutely bursting with flavor! 

You can eat these burgers on top of fresh greens or in between a toasty whole grain or brioche bun and add all DA SAUCE ON THAT!

stone ground mustard turkey burgers 

Ingredients:
  • 2 lbs. of ground turkey
  • 2 tbsp stone ground mustard
  • sea salt & pepper, to taste
  • 1 tbsp extra virgin olive oil or butter (for cooking in pan) 

Toppings:
  • Mustard-mayo spread {mix 2 tbsp stone ground mustard + 2 tbsp organic mayo}
  • red onion, thin slices
  • handful of arugula
  • toasted brioche bun

1.  Put turkey and stone ground mustard in a large mixing bowl.  Work the mustard into the meat until they are evenly combined.  Divide the meat into 8 balls, then flatten those balls into 1-inch-thick patties. 

2.  Melt butter or pour olive oil into a large frying pan over medium-high heat, then add patties to the pan or grill the patties.  Cook the patties for about 6 minutes on each side.  

3.  Serve the burgers in between a toasted bun with a heavy spread of mustard-mayo, some arugula and red onion slices.

NUTRIBULLET BANANA PROTEIN PANCAKES

If I call you darling, will you make me pancakes?

This is one of the most hassel-free pancake recipes you will find.  No hand mixing and dirtying large mixing bowls here, just blending and pouring! These pancakes can be made with unflavored or flavored protein powder. I prefer 1 scoop of unflavored protein powder and 1 scoop of vanilla protein powder, just for some added sweetness.  But feel free to get creative and customize your pancakes. Top these delicious cakes with some pure maple syrup or a raspberry jelly compote {recipe below}, that tastes just like a jelly donut when eaten with the pancakes!

NUTRIBULLET BANANA PROTEIN PANCAKES 
makes about 7-9 small pancakes

Ingredients: 
  • 2 bananas, chopped
  • 3 eggs
  • 2 scoops of protein powder {unflavored or flavored}
  • 1 tsp. vanilla extract
  • 1/3 tsp. cinnamon
  • sea salt, to taste

1. Place all ingredients into a Nutrilbullet or a blender.  Blend until it makes a smooth batter.

2.  Pour batter directly onto a medium hot skillet, greased with ghee or coconut oil to make small pancakes. 


RASPBERRY JELLY COMPOTE

Ingredients:
  • 1 cup raspberries
  • 1/2 lemon, juiced
  • sea salt, to taste

1.  In a small pot on medium heat, place all ingredients inside.  Let simmer for about 10 minutes, stirring occassionally. 

2.  Pour onto your pancakes for a delicious jelly donut taste!

QUICK PUMPKIN OAT COOKIES

The quickest cookie recipe for those in need of something sweet + healthy in a jiffy!  

QUICK PUMPKIN OAT COOKIES
makes 7 cookies

Ingredients:
  • 1 c. rolled oats
  • 1/2 c. organic pumpkin puree
  • 2 tbsp. maple syrup
  • 1/2 tsp. vanilla extract
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. allspice

1.  Preheat oven to 350 degrees.

2. In a large bowl, mix all ingredients together until a thick batter forms.

3. Using your hands, form batter into cookies and lay on a greased baking pan.

4.  Bake for 10 minutes! 

These delightful cookies are chewy and flavorful! If your feeling kind enough to share, double everything in the recipe except the vanilla extract and spices :)

BLUEBERRY ALMOND OATMEAL

​KEEP CALM, AND EAT OATMEAL.

I can never get enough oatmeal.  It's warm, creamy and can be mixed and topped with pretty much anything. Oatmeal is the quickest meal for anytime of day.  

Here is a quick and satisfying recipe to warm your sweet oatmeal soul. 

Blueberry Almond Oatmeal
serves 1


Ingredients:
  • 1/2 c. rolled oats
  • water, enough to cover oats
  • 1 tbsp almond butter
  • 1 scoop vegan vanilla protein, optional 
  • 1 cup blueberries
  • 1/2 tsp. almond extract
  • cinnamon, sprinkling
  • 1/4-1/2 c. almond milk

1.   Put oats in a small glass bowl, and pour in enough water to cover oats.
2.  Microwave oats for 1 minute, or until oats are cooked.
3.  While oats are still hot, stir in nut butter, spices, protein powder (optional), and extract.
4.  Add some milk and blueberries, and stir altogether once more.

Enjoy this delicious bowl of oatmeal that will keep you feeling warm and fully satisfied. ​ :)
