Artichoke and Roasted Red Pepper Shrimp Scampi

"Scampi" is most commonly known in America as a dish of shrimp, typically sauteed in a garlic butter and dry white wine sauce, served either with bread or over pasta.

My healthy twist on shrimp scampi will taste just as savory as traditional versions, but with better health benefits for your body!

​The meaty artichokes and roasted red peppers in this dish provide a great source of antioxidants for your body.

This simple recipe uses jarred artichokes and roasted red peppers to add color and a rich dimension to this dish.  As well as, the intoxicating lemon and garlic combination that transforms the shrimp to something truly decadent and delicious.  

​Serve this wonderful shrimp and vegetable combination over zoodles, zucchini noodles, and you have a healthy magical meal awaiting you.

Artichoke and Roasted Red Pepper Shrimp Scampi

Ingredients:
  • 3 tbsp Extra virgin olive oil
  • 1 1/2 pounds of shrimp, peeled and deviened
  • 1 - 12 ounce jar of artichoke hearts, rinsed, drained and quarted
  • 1 - 12 ounce jar of roasted red peppers, rinsed, drained and quarted
  • 2 shallots, thinly sliced
  • 5 cloves of garlic, minced
  • 1 lemon, juiced
  • 2 tbsp red wine vinegar
  • 2 tsp red pepper flakes 
  • 2 tbsp fresh herbs (parsley and thyme work well)
  • Salt and pepper, to taste
  • Zucchini noodles or angel hair 

1.  Heat the oil in a large skillet over medium heat. 

2. Add the shallots and garlic, and cook until shallots are translucent, or 4-5 minutes. 

3.  Add the shrimp, artichoke hearts, roasted red peppers, vinegar and lemon juice and cook until shrimp are cooked through, 5-6 minutes. Shrimp should be a nice pink color.

4.  Stir in the herbs, and season with red pepper flakes, salt and pepper.  

    Serve this delicious meal in a bowl by itself or over zucchini noodles.  For an exciting finale, toast and butter some whole grain bread to soak-up the juices left in your bowl when you have finished, yum!

I love this recipe! I also tried it with a few changes. I added butter to the olive oil (totally optional). Then I added capers, sliced black olives and feta cheese. It's delicious this way too. Thank you so much for your recipe. It's really delicious.

A little spicy even at half the red pepper flakes but delicious variety of flavor and textures.
