"Scampi" is most commonly known in America as a dish of shrimp, typically sauteed in a garlic butter and dry white wine sauce, served either with bread or over pasta. My healthy twist on shrimp scampi will taste just as savory as traditional versions, but with better health benefits for your body! The meaty artichokes and roasted red peppers in this dish provide a great source of antioxidants for your body.
This simple recipe uses jarred artichokes and roasted red peppers to add color and a rich dimension to this dish. As well as, the intoxicating lemon and garlic combination that transforms the shrimp to something truly decadent and delicious. Serve this wonderful shrimp and vegetable combination over zoodles, zucchini noodles, and you have a healthy magical meal awaiting you.
