Baked SWEET POTATO PIZZA

Let's put a fun twist on pizza night and pile your favorite pizza toppings on either a baked sweet potato or a baked white potato!  Bake your potatoes ahead of time for a quick and simple meal that will be done in less than 20 minutes.  

When buying potatoes, choose organic, so those nasty pestisides don't harm your health.  Potatoes provide a wide range of nutrients and fiber to our bodies, so don't be afraid to experiment with this starchy vegetable!

BAKED SWEET POTATO PIZZA
4 small baked potatoes serves 4

Ingredients:
  • 4 baked organic sweet potatoes or white potatoes, bake at 350 degrees  for 1 hour
  • 1/2 cup organic tomato sauce
  • 1/2 cup goat cheese, crumbles
  • 1/2 red onion, chopped tiny
  • 1 red pepper, chopped tiny
  • 1 head broccoli, chopped tiny
  • Natural and Organic Applegate Pepperoni (optional), chopped into small pieces

1.  Preheat the oven to 400 degrees.

2.  Slice your baked potatoes in half long ways.  Then, using a fork, gently mash the potato down so it's a flat even surface for adding pizza toppings.

3.  Spread tomato sauce on first, then add the rest of your pizza toppings.  For meat lovers, add lots of pepperoni! 

4.  Place your baked pototes on a large pan, and bake for about 14 minutes. 


Enjoy this healthy and filling way to eat pizza!
