CHILI NACHO BOWL

Why is it so hard to find an exercise bike with a nice little basket where I can put my nachos?

If you are craving something, make it! Cravings are feelings your body is expressing, it's how your body communicates to your brain that it needs food. Food is fuel, so why should we neglect what makes are body healthy + happy?! 

Judging by the title of this post, you can obviously see I was craving chili nachos :) So, I made a version of chili nachos that makes my body + soul happy!  You will notice in my recipe that I use phrases like NACHO BOTTOMS and NACHO TOPPINGS.  These can be personalized to fit what your body likes.  I enjoy using fresh greens and crunchy peppers in my nachos, because it's what makes my whole body feel good.  It's also a super simple way to get in your veggie servings-smothered in chili + cheese-count me in!
Enough talking, go get your nacho on! 

BONUS: You will definitely have delicious chili leftovers!! 

CHILI NACHO BOWL
makes mucho servings

Ingredients:
  • 1 tbsp organic butter or ghee
  • 1 lb ground beef or sausage
  • 1 lb ground chicken or turkey 
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tbsp cumin
  • 1-24 oz. can of tomato sauce
  • 12 oz. water (fill sauce can half way)
  • 1/2 lime, juiced or 1/2 lemon, juiced
  • salt + fresh ground pepper, to taste

NACHO BOTTOMS
  • fresh greens (baby kale, spinach)
  • 1 yellow pepper, chopped
  • 1 orange pepper, chopped

NACHO TOPPINGS
  • fresh cilantro 
  • shredded cheese
  • guacamole

1. In a large pan, heat 1 tbsp butter and saute onions and garlic until fragrant.  

2. Next, add in chicken and beef.  Chop meat into small pieces while it's cooking.
Once meat has browned, add in spices, tomato sauce and water.  Stir to combine all ingredients together.  

3. Let chili simmer for about 10 minutes.  Stir in lime juice right before serving.  

4. To serve, place NACHO BOTTOMS like a handful of fresh baby kale and crunchy peppers in the bowl first.  Then, using a big spoon, pour your NACHO CHILI on top.  Add your favorite nacho toppings and enjoy your body's craving-it's fuel :)
