Ingredients: 5 chicken breasts + lemon + Greek yogurt + feta + spices {italian seasoning, fresh garlic & ground pepper} 1. Cut chicken breasts into smaller chunks and place in a large mixing bowl. 2. Add a drizzle of Extra Virgin olive oil, 1/2 of a lemon juiced, and a good amount of Italian seasoning to cover the chicken. Mix all together. 3. Add chicken to a large skillet and cook on medium heat. Add 2-3 cloves of minced garlic to the pan about halfway through cooking. Finish cooking chicken until tender or no longer pink. 4. To make a tasty cool Greek yogurt sauce, just mix in a small bowl, 1 cup of Greek yogurt, 1/2 of a lemon juiced, fresh ground pepper and a sprinkle of Italian seasoning altogether [add a sprinkle of cayenne if you like it spicy]. 5. Serve this tasty Greek chicken with a large dollop of the cool yogurt sauce and a sprinkle of feta on top. Pair with your favorite veggies and grain! The first meal photographed is a Greek chicken whole grain wrap with artichokes, asparagus and roasted butternut squash. The second meal is a Greek chicken plate served over chopped kale with roasted butternut squash and baked whole wheat naan wedges.
