Whether you're celebrating St. Patrick's Day or just want a delicious and healthy recipe to enjoy- these waffles hide all flavors of the spinach that's in them, shhh! What's even more fun, is that you can pretend the green specks (spinach) are bits of lucky clover that the leprechaun hid in your waffles for good luck! If I was a kid again, that would be truly magical to me, especially if it's drizzled heavily with some sweet maple syrup too. This recipe is very similar to my Grain-Free Waffle Recipe, which is my favorite out of all my waffle recipes. The taste is exactly the same, just with some hidden nutritional value from the spinach. But that's our little secret ;). LUCK OF THE IRISH WAFFLES makes 3 filling waffles Ingredients:
1. Heat the waffle iron and brush it well with the melted coconut oil, ghee or butter. 2. In a large mixing bowl, whisk together all of the dry ingredients. In a separate smaller bowl, mix together the wet ingredients. Add the wet ingredients into the dry ingredients, and whisk all together to combine. 3. Pour about 1 cup of the batter into your waffle iron to cook your fluffy Irish waffles. Repeat until all of the batter is gone. 4. Serve the waffles with pure maple syrup, some sliced fresh fruit and whatever breakfast sides that make your heart and body feel lucky! Always craving good food, Jillian
