Maple Glazed Doughnuts

Doughnut or donut?  You don't spell it, you eat it! 

Let's put spelling aside, and get ready for the healthiest and tastiest doughnut you have ever had!  I finally splurged on a $10 doughnut pan at Target and made my baking dreams come true. I have been motivated for quite some time to create a simple, healthy and totally delish sweet treat, preferably in the shape of a doughnut :)  

You could eat these doughnuts by themselves or glaze them up with an amazing maple glaze. Once you dunk your doughnut in this maple glaze, you will be licking the freakin' bowl and everything else the glaze touches, haha.  But please, doughnut take my word for it.  Grab your donut or doughnut pan and give this simple recipe a whirl!  

​Craving chocolate??  There is also a chocolate version of this doughnut as well (see recipe).

MAPLE GLAZED DOUGHNUTS
makes 10 doughnuts

Ingredients:

Wet
  • 1 egg
  • 1 cup almond milk (use any milk)
  • 1 tsp. vanilla extract
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
Dry
  • 2 cups oat flour (blend oats in a food processor)
  • 1 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/4 tsp. salt
For Chocolate Maple Glazed Donuts also add:
  • 1/4 cup cacao powder or unsweetened cocoa powder
  • 1 tsp. instant espresso or coffee 

Maple Glaze
  • 2 tbsp. coconut oil (+ some for greasing doughnut pan)
  • 2 tbsp. maple syrup
  • 2 tbsp. almond milk (use any milk)
  • 1/2 tsp. vanilla extract 

1.  Preheat oven to 350 degrees and grease a doughnut pan with coconut oil. 

2.  In a large bowl mix wet ingredients together.  Then add dry ingredients. Whisk everything together until it makes a nice doughnut batter. 

3.  Pour doughnut batter into a measuring cup with a pourable lip or top. This helps you accurately pour the batter into each doughnut cavity.  Fill each doughnut cavity with the batter.  Bake for 20-25 minutes, or until your toothpick comes out clean. (Toothpick test: Stick a toothpick in the doughnut until it comes out clean) 

4.  While doughnuts are baking, mix all of the glaze ingredients together in a small pot over low medium heat until it starts to simmer. Remove from heat and put aside until doughnuts are baked and cooled. Dip each doughnut into the glaze.  If you have excess glaze you can always pour more glaze all over the doughnuts :)
