You guys are going to love these yummy Simple Oat Pancakes! They are gluten-free and guilt-free, yippee! The oats make these pancakes very special, because they stay crispy on the outside, but soft and fluffy on the inside. Did I mention that these pancakes are also very F I L L I N G and will most definitely leave you feeling satisfied :)
Let's grab a few ingredients and make some pancakes, so your weekdays start to feel like the weekend!
SIMPLE OAT PANCAKES
makes 4 large pancakes
1. Using a Nutribullet or food processor, blend oats until they are a flour-like consistency.
2. In a large mixing bowl, whisk all of the wet ingredients together. Next, add all of the dry ingredients and whisk to make a thick pancake batter. You may need to add 1-2 tbsp of milk to the pancake batter later. The batter gets thicker the longer it sits.
3. Heat some butter or ghee in a large skillet on medium heat.
4. Pour pancake batter on the skillet to make 4 large pancakes. Cook and flip. Serve your pancakes with your favorite toppings (mine is butter + maple syrup) and pair them with other yummy breakfast staples.
